Eggs bought from the supermarket come with a use-by date. In France, eggs can’t be sold 7 days before the minimum durability date. If you get eggs from a henhouse, there’s no use-by date, but they should be consumed within 28 days of laying.

It’s okay if the eggshells are intact. You can keep eggs in the fridge for a month after the use-by date, which is 58 days after they were laid. Storing them properly keeps them fresh, prevents mold, and reduces food waste. Keep your eggs refrigerated to stay safe.

Similar to other fresh items, eggs can acquire an odd scent when they expire. If you realize that an egg has surpassed its expiration date and you wish to save it for later use, begin by smelling it. Expired eggs usually emit an unpleasant smell and should not be consumed as they may have lost their nutrients and taste different. If the scent appears normal, you can proceed to promptly consume the egg, such as by making an omelette.

Use your eyes to check if an egg is expired. Look at the shell closely to make sure it’s not powdery, sticky, cracked, or in bad condition. If you see any strange colors like blue, pink, black, or green when you crack the egg, it may not be safe to eat.
